DAS VIELFALTSBROT
Gesund, duftend, knusprig-saftig und ganz schnell fertig.
Do it yourself
When I bake this bread, a fragrance spreads throughout the house that lures everyone into the kitchen.
I prefer to get the organic ingredients from farmers who treat their soil with love and build up humus!
Talk to your organic farmers about how you can buy from them without packaging.
If you want to enrich the bread with lots of vital substances, soak a handful of sunflower seeds in water in the evening.
in water in the evening. In the morning, rinse the already germinated sunflower seeds well,
because the germination water contains slightly toxic substances.
Now let's get started:
Grind the grains of
- 250g spelt or emmer grain
- 250g rye grain
To this you mix - depending on what you want to use to build up your cells with your bread:
- 1 packet of dry ferment
- 3 tbsp. whole salt or more
- ground spices: cumin, caraway, fennel, aniseed and fenugreek
- nettle seeds
- hemp seeds
- pumpkin seeds
- walnuts
- dried cranberries
- freshly grated linseed
- sunflower seeds, if you have not sprouted them

Mingle everything well and now add to it:
- 500ml warm (ideally) spring water with
- 2 tablespoons apple cider vinegar and
- 1 tsp honey
Turn up your oven to about 40 degrees. Sprinkle your loaf tin with sesame seeds and pour in the dough.
Bless your bread. Use your finger to draw a healing sign on the surface - for example, a figure eight.
When your bread has "risen", turn the oven to 200° (convection oven) and bake it for 1 hour.
Now the delicious aroma will spread through your rooms.
As hard as it is, wait a little while before you cut your bread and share it with your loved ones.
A big THANK YOU to Sonja and Franz Knittelfelder, who are both LivingEarth crowdfunder. I was able to learn this bread recipe at a "Humus Event" in their beautiful house surrounded by vegetables and fruit in Carinthia.
Sonja and Franz organise diversity days where you can learn many other wonderful things.
